CARP A LA THE WHITE LADY
4 portions of a carp, salt, 1 spoon of lemon juice, 2 spoons of a flour, 4 spoons of sunflower oil, 4 thin slices of a bacon (salted pork fat), 1 bulb, 2 bay leaves. 10 grains of pepper, sunflower oil, 2 spoons of the oil, small cut basil
Portions of a carp we will rinse with water and we will wipe a towel. Let's salt, we will dig lemon juice and we will leave to lie one hour in a cold place. Then portions of a carp we will roll in in a flour and we will put in the warmed-up sunflower oil. Then we will add slices of a bacon or the salted pork fat, small cut onions, a bay leaf and pepper grains.
Carp we will fry on both parties, then we will add a little water and we will a little extinguish, having covered.
After the carp becomes soft, we will wait all water won't evaporate yet. After that we will add two spoons of oil. When oil will be kindled, we will take out a carp, we will water it with the remained juice mixed with oil, and we will strew with small cut basil






CARP ON BEER A LA YICOOB KRCHIN
4 portions of a carp, salt, ground pepper, 250 g of light beer — are best of all "Budvar", 2 spoons of sunflower oil, 1 bulb of average size, lemon juice from a lemon half, caraway seeds, ground red pepper, 50 g of oil
Portions of a carp we will wash up, we will dry up a towel, we will salt, we will pepper, sbryzny beer and we will put at one o'clock in the refrigerator. Then in a frying pan on the warmed-up sunflower oil we will fry the onions cut by circles. Then we will put on it portions of a carp and we will quickly fry them from both parties. After that we will pour in a frying pan the remained beer, we will add lemon juice, caraway seeds, ground red pepper (to taste) and we extinguish, having covered, on slow fire about 18 minutes.
Ready portions of a carp we will carefully take out, we will put on a dish and we will water with the filtered juice in which we added previously 50 g of oil.





CARP, SMOKED ON THE PLATE
4 portions of a carp, are desirable from a backbone, salt, the pepper, a grated horse-radish
2 handfuls of sawdust of beechen wood (it is possible to replace with other firm tree) and 3 grains of a juniper
Carp we will wash up, we will salt and we will pepper. Let's prepare cast iron for smoking. It is possible to use and a pan from cast iron. Let's put it on a tile of the electric stove, on a bottom nasyply sawdust of firm wood, and on them we will put a lattice for steam boiling, In sawdust we will add 3 grains of a juniper.
Portions of a carp we will put on a lattice, we will cover a pan or cast iron and we will include an electric stove. In 15 minutes of a carp we will overturn on other party and we smoke 10 more minutes.
Carp we submit with a grated horse-radish and bread.
The similar smoking shed can be made and at a dacha if into old cast iron we will insert a lattice. After that it is possible to smoke. According to this recipe it is possible to prepare and other fish.







CARP A LA PETER VОК
4 portions of a carp, salt, 8 grains of pepper, 1 teaspoon of caraway seeds, 4 spoons of a flour, 1 teaspoon of red ground pepper, 2 eggs, 3 segments of garlic, breadcrumbs, sunflower oil for a zhareniye
Garnish: potatoes

Carp we will clear, we will draw, we will cut off the head, we will cut along a backbone on two half. Let's rinse with water. On skin of both half of a carp we will make cross-section cuts that half when roasting weren't jarred on.
Half of a carp we will rub the garlic pounded with salt, we will strew with svezhamoloty caraway seeds. We bake on the warmed-up fat or oil in well warm oven. During roasting from time to time we water fish with the flowed-out juice and depending on need a small amount of water. We bake within 15 minutes. The baked carp we will strew with small cut parsley.
